So we had all the family over for Mommy's Day. Thomas had his baby dedication at church and so we had everyone over afterward for lunch.
Here was the menu - Steak, Chicken, grilled veggies, salad, baked potato, baked beans, corn on the cob, bread, and dessert.
So my goal for the week is to see just how many different meals I can create from the leftovers and what I already have on hand. It looks like I may have to buy two or three things to supplement but here is what we have had so far and the plans. I should also mention that lunches are whatever is left in the fridge. I am just trying to create new meals from what is left for the week.
Monday Night: We had friends over so we were feeding extra people.
I made an eggplant Parmesan bake - using all the leftover grilled eggplant, I also had left over pasta from Saturday night's meal that I used in the bake, we had leftover bread, and leftover salad. It worked, quick, easy, and yes they knew it was leftovers.
Tuesday Night's Plan: We still have leftover grilled veggies, and grilled chicken, I think I will heat these up and add some taco seasoning, I need to buy some flour tortillas but I see the makings of some tasty fajitas coming together for tonight hopefully.
Wednesday's plan: We actually may end up having this tonight if I don't make it to the store to get the flour tortillas. But I am thinking some version of Beef Stroganoff with the leftover steak and some canned mushrooms, and the leftover sour cream from the baked potatoes, adding some rice and we should be good.
Thursday's plan: We are heading to the end of the week but we still have some chicken that we didn't grill that I want to use in something, I am thinking of using some of the potatoes we have left too. Not sure what I will end up doing. But I will let you know.
Friday's plan: Typically Friday is our pizza night so I am thinking if we have any grilled veggies or meat left I will throw it on the pizza, and I think we still have some lettuce left that hopefully will make it to the end of the week for another salad. BTW - in our house we love leftovers and I always tend to cook extra for this reason. We also like lots of toppings on our pizza, any veggies or meat we have leftover from the week becomes extra toppings for the pizza. Even if we are having frozen pizza out of the box we always add extra toppings and cheese. Some of our toppings have included just about any veggie you can imagine, pepper, onion, olives, artichokes, just about anything. Meats we have added taco meat, leftover sandwich meat, steak, chicken, bacon, sausage you name it.
Well this is the plan for the week. I will try and post later to let you know how well we stuck to the plan. If you have some more meal ideas from my above mentioned list. Let me know I love new recipes.
I should also mention that we had no leftover dessert. There was probably over a quarter of a 8inch round cake left on Sunday, until Henry crawled on top of the table and ate every bit of what was left of the cake.

Saw your comment on Rachel Anne's site. Welcome to Home Sanctuary. I have two little ones too...and they do keep us on our toes. The Small Things are great because they're small...sometimes that's all we have time for...if we even have time for them. =p Well, good luck with everything.
